Ingredients

  • 2 eggs
  • 1/2 cup brown sugar
  • 1 tsp lemon zest
  • 1/2 cup lemon or orange juice
  • 1/3 cup oil
  • 1 1/2 cups whole wheat flour
  • 1 tbsp baking powder
  • a pinch of vanilla

Method

  1. Beat the eggs with the sugar, lemon zest and vanilla until the sugar dissolves completely and the mixture is thick and pale.
  2. Add the juice and oil and beat well.
  3. Sift the flour and baking powder, add gradually, and fold with a spoon from top to bottom until the batter is uniform.
  4. Toss the nuts in a little flour so they don’t sink to the bottom when added.
  5. Grease the cake pan with oil or butter and dust with flour. Pour the batter into the pan and spread the floured nuts on top.
  6. Bake in a preheated oven at 160°C (320°F) for about 30 minutes, or adjust according to your oven.

  7. Let the cake cool before removing it from the pan and serving.
