Ingredients:

1/2 kg flour

1/4 kg cold butter

Vanilla

Egg

Fresh strawberries

Strawberry liquid jam

Creme Patisserie filling ingredients:

4 tablespoons flour

1 cube butter

4 tablespoons sugar

Vanilla

Milk as needed

2 eggs

Pinch of salt

Preparation:

Rub the flour with the cold butter cut into very small cubes. Add vanilla and the egg and mix without kneading. Add only a very small amount of cold water as needed. Gather the dough, wrap it in plastic, and refrigerate for a few hours.

Roll the dough to a 1 cm thickness in a tart pan, and prick the surface all over with a fork to prevent puffing when baking. Bake the tart crust in a moderate oven until cooked and golden.

In the meantime, prepare the creme patisserie. Place the flour with the butter and sugar in a pot over heat and stir until smooth, then gradually add the milk while whisking continuously. When the mixture thickens, add two beaten eggs, a pinch of salt, and vanilla, and whisk quickly for one minute before removing from heat. Put the hot creme patisserie into a glass bowl and cover it directly with plastic wrap.

When the cream cools, brush the tart crust with a thin layer of strawberry jam, spread the creme patisserie, then arrange fresh strawberries and drizzle with strawberry jam.

Serve the strawberry tart straight from the fridge. You can decorate it with whipped cream.
