Ingredients

  • Pastry:
  • 2 cups all-purpose flour
  • 125 g butter at room temperature
  • 3/4 cup powdered (confectioners') sugar
  • 2 egg yolks
  • vanilla
  • pinch of salt
  • Crème pâtissière (pastry cream):
  • 2 cups milk
  • 6 tablespoons sugar
  • 3 tablespoons cornstarch
  • 3 eggs
  • lemon zest and vanilla
  • 1 tablespoon butter

Method

  1. First, start preparing the dough: put the flour, butter, salt, vanilla, egg yolks, and powdered sugar into a food processor to obtain a soft dough with a smooth texture.
  2. Place the dough in a tart pan and press it evenly, then refrigerate it for half an hour.
  3. Prepare the pastry cream (crème pâtissière): put the milk on the heat with lemon zest until it heats slightly.
  4. In a separate bowl put the eggs, sugar, and cornstarch and mix them with a hand whisk or fork until combined.
  5. Add a little of the hot milk over them and whisk very quickly so the eggs don't cook.
  6. Immediately, add this entire egg mixture to the milk on the heat and stir well to obtain a smooth cream.
  7. Then add the butter and vanilla and mix.
  8. Remove the cream from the heat and pour it into a bowl, cover it with cling film to prevent a skin forming on the surface.
  9. Place the strawberry tart pan after half an hour in a preheated oven, taking care to place beans or chickpeas on top of the dough so the tart shell doesn't puff up when baking.
  10. Leave the tart pan for about half an hour or less so only the edges brown.
  11. Remove the beans and brown the top slightly.
  12. Remove the pan from the oven and let the crust cool completely at room temperature.
  13. Spread the crème pâtissière over the tart crust once it has cooled.
  14. Decorate the tart with fresh strawberries; you can use other fruits as desired.
  15. Chill the strawberry tart in the refrigerator to cool thoroughly before serving.
