Ingredients
- Pastry:
- 2 cups all-purpose flour
- 125 g butter at room temperature
- 3/4 cup powdered (confectioners') sugar
- 2 egg yolks
- vanilla
- pinch of salt
- Crème pâtissière (pastry cream):
- 2 cups milk
- 6 tablespoons sugar
- 3 tablespoons cornstarch
- 3 eggs
- lemon zest and vanilla
- 1 tablespoon butter

Method
- First, start preparing the dough: put the flour, butter, salt, vanilla, egg yolks, and powdered sugar into a food processor to obtain a soft dough with a smooth texture.
- Place the dough in a tart pan and press it evenly, then refrigerate it for half an hour.
- Prepare the pastry cream (crème pâtissière): put the milk on the heat with lemon zest until it heats slightly.
- In a separate bowl put the eggs, sugar, and cornstarch and mix them with a hand whisk or fork until combined.
- Add a little of the hot milk over them and whisk very quickly so the eggs don't cook.
- Immediately, add this entire egg mixture to the milk on the heat and stir well to obtain a smooth cream.
- Then add the butter and vanilla and mix.
- Remove the cream from the heat and pour it into a bowl, cover it with cling film to prevent a skin forming on the surface.
- Place the strawberry tart pan after half an hour in a preheated oven, taking care to place beans or chickpeas on top of the dough so the tart shell doesn't puff up when baking.
- Leave the tart pan for about half an hour or less so only the edges brown.
- Remove the beans and brown the top slightly.
- Remove the pan from the oven and let the crust cool completely at room temperature.
- Spread the crème pâtissière over the tart crust once it has cooled.
- Decorate the tart with fresh strawberries; you can use other fruits as desired.
- Chill the strawberry tart in the refrigerator to cool thoroughly before serving.
