Delicious shrimp stew... a quick recipe suitable for working women
Ingredients
- Shrimp (prawns)
- Onion
- Garlic
- Ginger
- Hot pepper
- Green bell pepper
- Black pepper
- Sweet spice
- Dried coriander (cilantro)
- Peeled tomatoes
- 1 teaspoon tomato paste
- Olive oil
- Salt
- A squeeze of lemon

Method
- Chop the onion and garlic, grate the ginger, and sauté them in olive oil.
- Add slices of sweet and hot green pepper and the spices, and sauté them.
- After a short time add the peeled, chopped tomatoes and cook until the tomatoes soften, then add tomato sauce and let the mixture simmer until it thickens slightly.
- Add the shrimp and cook, stirring, for about 10 minutes only.
- Turn off the heat, squeeze a lemon over the top, and serve the shrimp stew with white rice.
