- 100 g softened butter
- 1 medium spoon mahlab
- 2 tablespoons powdered sugar
- 2 tablespoons powdered milk
- 1 whole egg plus one egg white (save the yolk to brush the discs later)
- 1 tablespoon orange blossom water
- 1 tablespoon rose water
- 1 tablespoon vanilla
- 1/4 cup fine semolina
- 2 cups flour
- For the date filling:
- Ground dates
- Orange blossom water and rose water
- A pinch of cardamom
- For the walnut filling:
- Chopped walnuts
- A pinch of cinnamon
- A pinch of powdered sugar

Method
- Beat the egg with all ingredients except the flour and semolina, then begin adding the flour gradually and knead until you have a soft, non-sticky dough.
- Cover the dough for about half an hour to rest well, then roll it out thinly... place the filling lengthwise and roll the dough over it into a log, cut it lengthwise and then into pieces of the desired size...
- Brush the ma'amoul fingers with beaten egg yolk mixed with 2 tablespoons liquid milk and 1 medium spoon orange blossom water, then sprinkle with sesame seeds or ground pistachios.
- Place the ma'amoul fingers in a preheated oven at 180°C and brown them from the bottom and top.
