Ingredients

Start here, then move straight into the method.

  • Cauliflower, washed and cut into medium florets
  • Batter
  • Plain yogurt
  • 1 egg
  • 1 cup all-purpose flour
  • 2 garlic cloves, minced
  • Salt
  • Black pepper
  • Ground cumin
  • Dried coriander

Method

Follow the cooking sequence without leaving the page.

  1. Cut the cauliflower into medium florets. Wash them, then blanch in boiling water for 3 minutes only so they don’t fully cook — this removes the strong smell and leaves them half-cooked.

  2. In a bowl, whisk together the yogurt, egg, flour, garlic, salt and spices. Then coat the florets in this batter and let them sit for just 5 minutes.

  3. In a frying pan, add a little oil and heat it. This helps prevent the florets from absorbing too much oil when frying.
  4. Fry the cauliflower on all sides until golden brown.
  5. Transfer to a sieve or a paper towel–lined plate to drain excess oil, then serve immediately while hot.
