For the Creme Caramel:

1 liter milk

1 cup sugar

8 eggs

juice of a lemon and zest of one lemon

1 teaspoon vanilla

For the Caramel:

1 1/2 cups sugar

3 tablespoons water

Method

  1. Place sugar and water in a saucepan over heat and stir until the sugar darkens slightly. Remove from heat and swirl the saucepan to ensure caramel coats the edges. Let it cool and harden.
  2. In a blender, add the milk, sugar, eggs, vanilla, lemon zest and lemon juice and blend well for about 10 minutes.

  3. Pour the mixture over the hardened caramel.
  4. In a deep baking dish, fill with water halfway up the sides. Place the custard dish in the water bath and bake in a preheated oven at 180–200°C for about 45 minutes. Remove and let cool.

  5. Chill the creme caramel in the fridge for two hours before turning it onto a serving plate and garnish as desired…
