Making creamy pasta is a classic Italian-style dish and, most importantly, very easy!
Ingredients
- 4 cups baby spinach leaves
- 4 tbsp lemon juice
- 2 tbsp vinegar
- 1 garlic clove
- 3 avocados — 2 for the sauce and 1 optional for the salad
- 1 package spiral-shaped pasta
- 1 cup peas (frozen or fresh, cooked)
- 1 cup corn (frozen or fresh, cooked)
- 2 cups cherry tomatoes
- 1/4 cup olive oil
- 1 tsp salt, or to taste
- A pinch of ground black pepper
Method
- Boil the pasta according to the instructions on the package.
- Place the cooked pasta in a colander to drain.
- Put the drained pasta in a bowl with the peas, corn, and tomatoes.
- In an electric blender, add the avocado, garlic, spinach, and half the olive oil, and blend until smooth.
- Pour the blended mixture over the pasta and vegetables, add salt and pepper, the remaining oil, and pieces of avocado, then mix well.
