Ingredients

  • 2 eggs
  • 1 tablespoon vanilla
  • 1/2 cup sugar
  • 1/2 cup oil
  • 1/2 cup yogurt
  • 1/4 cup shredded coconut
  • 1 tablespoon baking powder
  • 2 cups fine semolina (or cake flour)
  • 1 can clotted cream (qeemar)
  • Cold syrup

Method

  1. With a hand whisk or electric mixer.. beat the eggs with the vanilla and sugar.. beat well
  2. Add the oil, yogurt, coconut and baking powder and whisk them together
  3. Finally add the fine semolina and mix well
  4. Pour the basbousa mixture into a pan greased with butter evenly
  5. Empty the can of clotted cream into a plastic bag and cut a small opening in one corner so it becomes a piping bag.. pipe vertical lines...
  6. Put the basbousa on the middle rack and bake at 180°C for 25 minutes
  7. When the sides brown, brown the basbousa on top until the surface is golden
  8. Soak it with cold syrup then set aside to cool
  9. When it cools, decorate and serve
