- 5 eggs
- 1 cup oil
- 2 cups sugar
- 1 cup milk
- 3 cups flour
- 2 teaspoons baking powder
- 1 tablespoon vanilla
- 1 teaspoon baking soda
- 1 cup shredded coconut
- 1 tablespoon vinegar

- Beat the eggs, vanilla, sugar and oil until you get a homogeneous mixture
- Add the sifted flour with the baking powder
- Mix well and add baking soda and vinegar (mix the soda and vinegar first until they foam, then add them to the cake batter)
- The vinegar and soda will help give the cake softness and make it rise well
- Add 1 cup shredded coconut and mix the batter well... you can add 2 cups shredded coconut if desired.
- Grease the pan with flour and a splash of oil or tahini and pour the coconut cake batter into the pan and bake on the middle rack for one hour at 180°C; it is important not to open the oven at all
- When the coconut cake is ready, remove it from the oven, brush the surface with syrup and garnish with shredded coconut
