  • 5 eggs
  • 1 cup oil
  • 2 cups sugar
  • 1 cup milk
  • 3 cups flour
  • 2 teaspoons baking powder
  • 1 tablespoon vanilla
  • 1 teaspoon baking soda
  • 1 cup shredded coconut
  • 1 tablespoon vinegar

Method

  1. Beat the eggs, vanilla, sugar and oil until you get a homogeneous mixture
  2. Add the sifted flour with the baking powder
  3. Mix well and add baking soda and vinegar (mix the soda and vinegar first until they foam, then add them to the cake batter)
  4. The vinegar and soda will help give the cake softness and make it rise well
  5. Add 1 cup shredded coconut and mix the batter well... you can add 2 cups shredded coconut if desired.
  6. Grease the pan with flour and a splash of oil or tahini and pour the coconut cake batter into the pan and bake on the middle rack for one hour at 180°C; it is important not to open the oven at all
  7. When the coconut cake is ready, remove it from the oven, brush the surface with syrup and garnish with shredded coconut
