- 100 g Chinese noodles, boiled for 5 minutes
- 50 g dried Chinese mushrooms, boiled for 5 minutes
- 3 carrots, grated
- 1 bunch fresh coriander, chopped
- 3 spring onion stalks, chopped
- Boiled skinless chicken breast
- Boiled shrimp, as desired
- 1 can corn
- The dressing:
- Juice of 2 lemons
- 1/4 cup sesame oil or olive oil
- 1 tsp black pepper
- 1 tbsp Chinese spice blend
- A small coffee cup of balsamic or white vinegar
- A small coffee cup of soy sauce
- Zest of half a lemon
- 2 garlic cloves, crushed
- Salt as needed

Method
- Whisk the dressing ingredients well.
- In a wide serving bowl, place the cooked noodles for about 5 minutes.
- Add the pieces of boiled chicken, then the shrimp, mushrooms, carrot, cilantro, onion, and corn.
- Pour the dressing over the salad and serve immediately.
