- 2 cups chickpeas, soaked overnight and boiled
- 1 cup chopped parsley
- 1 cup chopped fresh mint
- 1 cup green soybeans (edamame) — optional
- 1 cup chopped mixed bell peppers
- 2 cucumbers, finely chopped
- 1 large onion (white, green, or red), chopped
- Salt
- Olive oil
- 2 garlic cloves
- Green or black olives, pitted and sliced
- Lemon juice to taste
