Chickpea and Vegetable Salad — a healthy, vegan recipe that's really easy

Ingredients

  • 2 cups chickpeas, soaked overnight and boiled
  • 1 cup chopped parsley
  • 1 cup chopped fresh mint
  • 1 cup green soybeans (edamame) — optional
  • 1 cup chopped mixed bell peppers
  • 2 cucumbers, finely chopped
  • 1 large onion (white, green, or red), chopped
  • Salt
  • Olive oil
  • 2 garlic cloves
  • Green or black olives, pitted and sliced
  • Lemon juice to taste
  • Note:
  • You can add any vegetables you like, such as roasted tomatoes or roasted peppers, or as desired.

Method

  1. Mix the vegetables together, add the garlic, olive oil, lemon, and salt, and mix...
  2. Place it in the refrigerator for half an hour before serving.
