Ingredients
- 500 g chicken fillets
- 2 onions
- celery
- 1 red or green bell pepper
- 1 can of mushrooms or fresh mushrooms
- a small cup of green and black olives
- 2 garlic cloves
- bay leaf and wild thyme (optional, for flavor)
- a pinch of salt
- olive oil
- ½ liter (or half a can) of liquid cooking cream

Method
- Cut the chicken fillets into medium-sized cubes and fry them in olive oil in a large pot over medium heat.
- Add the bay leaf and continue stirring the chicken until it is browned on all sides.
- Add the onions cut into wedges, then add the bell pepper cut into cubes.
- Add the celery, coarsely chopped including leaves and stalks, then add the sliced mushrooms, green and black olives, and the crushed garlic.
- Stir the ingredients well for a few minutes, then pour in the liquid cream and add a pinch of salt.
- Add the wild thyme, and optionally a little chili or black pepper to taste.
- Let the chicken with celery and cream simmer over low heat until the cream thickens.
- Serve the chicken with celery and cream alongside white rice. You can omit the chicken to make a rich vegetarian version.
