Chicken Scaloppine is a delicious and very practical dish that both adults and kids enjoy. Marinate the chicken for at least two hours to achieve the desired result.

Ingredients

  • Boneless chicken breast(s)
  • 5 garlic cloves
  • Fresh ginger
  • 1 tablespoon salt
  • Lemon zest
  • 1 medium tablespoon ground black pepper
  • 1 medium tablespoon chicken seasoning
  • 1 medium tablespoon red pepper paste
  • 1 medium tablespoon cinnamon
  • 2 tablespoons oil
  • 2 eggs
  • 1 tablespoon soy sauce
  • 1 tablespoon mustard
  • 1/4 cup liquid milk
  • 1 cup flour
  • 1 medium tablespoon paprika (ground red pepper)
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 1/2 cups crushed cake or breadcrumbs
  • 1/2 cup cornflakes

Method

  1. Wash the chicken well and cut it into wide, somewhat thin slices. Wash the pieces with water and vinegar and rub them with the spice marinade made of crushed garlic, grated ginger, salt, lemon zest, pepper, red pepper paste, cinnamon and olive oil. Leave the chicken in the marinade for at least two hours.

  4. In another bowl place the flour, paprika, onion powder and garlic powder, and prepare 1 1/2 cups crushed cake/breadcrumbs with 1/2 cup cornflakes crushed roughly.
  5. When ready to cook, coat the pieces in flour, then the beaten egg mixture, then the crushed cake/breadcrumbs, and fry them in plenty of hot oil over medium heat, or bake them in the oven with two tablespoons of olive oil, according to preference.
