Chicken quesadilla made with saj (markook) bread — a Mexican recipe that is very popular in the Arab world.

Ingredients:

150 g chicken fillet

1 tsp ground red pepper or paprika

1 tsp garlic powder

1 tsp onion powder

a pinch of salt

3 tbsp vegetable oil

2 onions

1 green pepper

1 red pepper

2 garlic cloves

2 medium tomatoes

1 small cup mushrooms (canned or fresh)

1 small cup black and green olives

1 tbsp finely chopped green onion

markook (saj) bread or tortillas

mozzarella cheese

cheddar cheese

Preparation method:

Cut the chicken into small cubes and season with salt, oil, paprika, garlic powder and onion powder...
Sauté the seasoned chicken in a pan over the heat... then add the chopped onion, diced colored peppers and sliced mushrooms...
Stir for a few minutes then add the crushed garlic, chopped tomatoes and a pinch of salt...
Stir the mixture and after a few minutes add the black and green olives...
Let it simmer over low heat for 5 minutes then turn off the heat and add the finely chopped green onion...
Place a portion of the chicken quesadilla filling in the center of two saj flatbreads and sprinkle a little grated mozzarella and cheddar...
Fold the flatbread into a square and brush both sides with a little vegetable oil...
Brown the flatbread in a pan on both sides...
Cut the quesadilla into triangles and serve with fries and avocado sauce (guacamole) or cocktail sauce
