Ingredients:

1 kg chicken breasts, boneless

1 tablespoon minced garlic

1 onion, chopped

1 tablespoon mustard

1 tablespoon chicken fajita seasoning

1 tablespoon dried coriander

1 teaspoon ground cumin

1 teaspoon paprika or ground red pepper

hot sauce or chili to taste

colored bell peppers

fresh mushrooms or canned mushroom

corn kernels

Preparation:

Rinse the chicken well with vinegar and salt, and cut into slices.

Add minced garlic, minced onion, mustard, spices, coriander, cumin, paprika, and hot sauce. Let the chicken soak in the mixture for at least 5 hours.

In a wide skillet, heat a little sesame oil or olive oil if available; fry the peppers (green, yellow, red), as well as the onion, garlic, mushrooms, and corn.

Set the vegetables aside. In the same skillet, fry the chicken well until cooked, then return the sautéed vegetables to the pan and add a spoon of tomato sauce, soy sauce, and grated cheese.

Dough for the Tart Pan:

4 cups flour

2 tablespoons powdered milk

1/2 cup corn flour

2 tablespoons sugar

1/4 cup olive oil

1/2 cup yogurt

Water as needed

Pinch of salt

1 tablespoon yeast

1/2 teaspoon baking powder

Preparation of the dough:

Whisk the ingredients well, then knead by the usual method and set aside to rest and rise for about an hour.

In a tart pan, place the first dough layer, spread the ready fajita chicken filling over the dough, then sprinkle with cheese. Add a second dough layer on top and seal the two layers.

Brush the top with a little milk or egg wash and sprinkle sesame seeds.

Bake the fajita chicken tart in a preheated oven until it browns and cooks through, about 12 minutes. Serve with avocado sauce.

Avocado Sauce:

In a blender, combine two ripe avocados with two tablespoons powdered milk, a pinch of white pepper, a pinch of fajita spice, a spoon of lemon juice, a spoon of olive oil, and a spoon of white vinegar. Blend until creamy.
