4 large boneless chicken breasts, cut into large cubes
Spices: black pepper, cardamom, mixed spice, cumin, paprika, curry, salt
1 tablespoon butter
1 tablespoon vegetable oil
1 large onion, sliced
4 garlic cloves, crushed
1 green pepper, chopped
2 tomatoes, peeled and chopped
1 tablespoon tomato paste
1 green pepper, sliced
2 cups water
Grated carrot
Optional: sliced mushrooms as desired
Ingredients
- 2 cups rice
- 2 bay leaves
- 4 cardamom pods or 2 cinnamon sticks

- A little corn oil
- : Chicken mixture
- 4 large boneless chicken breasts, cut into large cubes
- Spices: black pepper - ground cardamom - mixed spice - ground cumin - chicken seasoning - paprika - curry - salt
- 1 large tablespoon butter
- 1 large tablespoon corn oil
- 1 large onion, cut into wedges
- 4 garlic cloves, crushed
- 1 green pepper, chopped
- 2 tomatoes, peeled and chopped
- 1 large tablespoon tomato paste
- 1 green pepper, sliced
- 2 cups water
- Grated carrot
- You can add sliced mushrooms if desired
Method
- Season the chicken with part of the spices, omitting the paprika.
- Melt the butter in a pot, add the oil, then add the chicken and sauté on high heat until the chicken browns.

- In the same pot, fry the onion until soft, then add the remaining vegetables gradually, stirring until they soften; then add the chicken, the sauce, the remaining spices and water, bring to a boil for 5 minutes and turn off the heat.Timers: 5 min

- In a second pot, fill with boiling water and add the bay leaves, cardamom or cinnamon, salt and oil; then add the drained rice and let it boil for about 5 to 7 minutes until the grains swell, then drain and set aside.Timers: 7 min
- In an ovenproof dish, and simultaneously for serving, place the chicken mixture, then spread the boiled rice over it and cover with aluminum foil after brushing it with a little corn oil..
