Cheese Dessert

Ingredients

• 500 grams unsalted mozzarella cheese
• 1/2 cup water
• 1/2 cup syrup
• 1/4 cup coarse semolina
• 1/4 cup fine semolina (farina)
• Orange blossom water and rose water
• Ashta

Method

1. Using a water bath method, place the cheese and water and heat until the cheese is well melted
2. Continue stirring the cheese constantly, lifting and stretching it after it melts, then begin adding syrup and fine semolina or farikha flour and also coarse semolina in small amounts while continuing to stir and stretch the dough until all the quantities are used
3. You will end up with a single, cohesive mass...
4. Add orange blossom water and rose water and continue stirring, then remove the mixture from the heat
5. Meanwhile prepare the syrup (shīrah) on plastic wrap; the syrup should be at room temperature...
6. Put a little syrup on your hand and roll out the dough using a second sheet of plastic wrap also sprinkled with syrup. Roll the dough with a rolling pin over the second sheet of plastic so the dough becomes sandwiched between two sheets...
7. Spread the clotted cream on the dough, roll it into a log, cut as desired and then garnish with Halabi pistachios and lemon blossom jam
