Ingredients
- 2 dry onions
- chicken, cut into pieces and washed
- 2 cups coarse bulgur
- salt
- 1 teaspoon ground cinnamon
- 1 teaspoon seven-spice blend
- a pinch of nutmeg
- vegetable oil
- half a cup vermicelli
Method
- Finely chop one of the two onions and sauté it in a pan until it browns. Add salt and spices to taste, then add the cut and washed chicken.
- Fry the chicken with the onion and spices for a few minutes until the chicken's juices begin to dry, then add about 3 cups of water and leave the chicken to cook until fully done.
- Remove the chicken from the water and set it aside. Put the bulgur into the chicken's cooking liquid and allow the bulgur to cook over low heat.
- A few minutes before the bulgur finishes cooking, fry the vermicelli in a spoonful of vegetable oil over the heat until it browns, then add it on top of the bulgur after draining it of oil.
- In a separate pan, sauté the second chopped onion using the same oil used to brown the vermicelli; after it browns, add the chicken pieces and leave them over low heat until they brown on both sides.
