Ingredients

  • 2 dry onions
  • chicken, cut into pieces and washed
  • 2 cups coarse bulgur
  • salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon seven-spice blend
  • a pinch of nutmeg
  • vegetable oil
  • half a cup vermicelli

Method

  1. Finely chop one of the two onions and sauté it in a pan until it browns. Add salt and spices to taste, then add the cut and washed chicken.
  2. Fry the chicken with the onion and spices for a few minutes until the chicken's juices begin to dry, then add about 3 cups of water and leave the chicken to cook until fully done.
  3. Remove the chicken from the water and set it aside. Put the bulgur into the chicken's cooking liquid and allow the bulgur to cook over low heat.
  4. A few minutes before the bulgur finishes cooking, fry the vermicelli in a spoonful of vegetable oil over the heat until it browns, then add it on top of the bulgur after draining it of oil.
  5. In a separate pan, sauté the second chopped onion using the same oil used to brown the vermicelli; after it browns, add the chicken pieces and leave them over low heat until they brown on both sides.
