  • 2 cups broccoli, chopped
  • 2 cups Cheddar cheese
  • 1 potato, diced
  • 2 carrots, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup peas
  • 4 cups chicken stock
  • or
  • (4 cups water + 2 Maggi chicken stock cubes)
  • 1 cup milk
  • 1 teaspoon turmeric
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 garlic clove, chopped or grated
  • 1 small onion, chopped

Method

  1. Melt the butter in a pot over medium heat. Add the onion and garlic and sauté until the onion softens.
  2. Add the flour, potato, carrots, celery and diced chicken. Then add the water or stock and the milk and stir well.
  3. Bring to a boil. When it starts boiling, add the peas.
  4. Let the ingredients simmer until the vegetables are tender. Then add the broccoli and the cheese and stir until the cheese melts.
  5. Let the broccoli soup simmer for an additional 5 minutes over medium heat, then remove from heat and serve.
