- 3 medium potatoes
- 2 stalks of celery (green)
- 1 cup fresh fennel (fronds)
- 1 white onion
- Sweet pickled cucumbers
- Dressing:
- 3 tablespoons mayonnaise
- 1 tablespoon olive oil
- 3 tablespoons Qareesh cheese (or cottage-style cheese)
- 1 tablespoon mustard
- Lemon juice
- Now prepare the dressing:
Method
- Wash the potatoes, boil them, and cut them to your desired size.
- Chop the celery stalks very finely.
- Also, wash the sweet pickled cucumbers thoroughly, finely chop them, and add them on top of the salad mixture.
- Rinse the fennel, pat it dry, and finely chop it.
- Cut the white onion into wedges and soak it in cold water for 15 minutes until the onion tastes sweet.
- Begin by preparing the salad dressing:
- Place the mayonnaise in a deep bowl and stir in the cheese.
- Add mustard to taste and about two tablespoons of lemon juice.
- You can omit the salt in this recipe because qareesh cheese (a salty Egyptian fresh cheese) already provides enough salt.
- Add black pepper to taste.
- Mix the dressing well and pour it over the salad ingredients, then refrigerate until served cold.
