Beef and Mixed Vegetables Tray Bake

This beef and vegetable tray bake is an easy, practical, and quick recipe. Serve this dish with a green salad and yogurt. Bon appetit in advance.

Ingredients

  • Ground beef
  • Chopped onion
  • Chickpeas\r\nPotatoes
  • Eggplant
  • Carrots
  • Tomato
  • Green and red bell peppers
  • Assorted spices to taste (bay leaves - cardamom pods - cinnamon sticks - beef spice)
  • Tomato paste sauce or tomato purée
  • Note
  • We can add any vegetables we like, such as carrots - green beans - cauliflower

Method

Follow the cooking sequence without leaving the page.

  1. Fry the onion until it softens, then add the minced meat, spices, and salt and sauté until cooked, then set aside. Peel the potatoes, eggplant, and carrots and cut them, then fry them in oil until cooked. Arrange the vegetables, meat, and chickpeas in a tray in the shape you like (similar to the accompanying photos). Mix in a separate bowl the tomato-paste sauce with water, paprika, and salt, and pour the sauce over the vegetables so it covers them completely.
  2. Put the tray in a hot oven for about 25 minutes or until the vegetables are well cooked and the sauce mixture thickens.

  5. Serve the vegetable-and-meat tray alongside cooked rice.
