Basbousa with cream—a very tasty recipe we highly recommend.
Ingredients
- 1 cup fine flour
- 1/2 cup sugar
- 1/2 cup plain yogurt
- 1/2 cup powdered milk
- 1/2 cup vegetable oil
- 1 teaspoon baking powder
- Vanilla
- 1 egg
- 1 can qashta (clotted cream)
- Syrup (atar/shaera)
- Syrup:
- 1 cup sugar
- 1 cup water
- Juice of half a lemon
- A splash of rose water and orange blossom water
- Nuts for garnish

Method
- First, prepare the syrup: dissolve 1 cup sugar in water in a saucepan over the heat until it boils. Then reduce the heat and add a squeeze of lemon. Let it boil for about 12 minutes.
- Turn off the heat, add orange blossom water and rose water, and set the syrup aside.
- Prepare the basbousa batter: mix the dry ingredients first, then in another bowl whisk the egg with the sugar and vanilla well.
- Pour the oil over the egg mixture and whisk, then add the yogurt and whisk.
- Then add the dry ingredients in batches and stir.
- Pour the basbousa-with-cream batter into a pan greased with oil and dusted with flour, and spread the mixture evenly.
- Take the qashta (cream) and distribute it over the surface of the batter as you like — see photo.
- Place it in the oven on the second rack at 200°C; after 10 minutes lower the temperature to 180°C.
- When the basbousa with cream is done, pour the reserved syrup over it and garnish with nuts as desired.
- Let it cool and serve.
