Ich, or Armenian-style tabbouleh, is one of the most delicious kinds of salad. It is similar to Lebanese tabbouleh, but has a very distinctive flavor! It is one of those vegetarian salads and recipes we highly recommend trying.
Ingredients
- 2 cups fine bulgur
- 1 finely chopped onion
- 1 cup olive oil
- 5 tomatoes, chopped
- 1 cup tomato juice
- chopped parsley
- fresh mint
- lemon juice
- sweet red pepper powder
- a pinch of cumin
- a pinch of salt
- cucumber
- dried mint
- lettuce
Method
- Heat a little olive oil in a pan and fry the onion until it changes color slightly, then add the salt and bulgur...
- Then add the tomato juice with a little water and leave the mixture to cook over low heat for about 10 minutes, until the bulgur absorbs the tomato flavor.Timers: 10 min
- Spread the bulgur on a wide platter so it can cool slightly. At this stage, add the lemon juice and the sweet red pepper powder or red pepper paste. Then top the bulgur with the rest of the vegetables, which you can add according to taste and availability: parsley, mint, lettuce, cucumber, green pepper, chopped green onion, etc.
- Garnish as desired with a drizzle of olive oil.
