Method
- Use a mixer to combine the flour, powdered sugar, butter, vanilla and the egg, beating until the dough comes together in one corner of the bowl.
- Divide the dough into two balls, wrap them in plastic wrap and refrigerate for one hour.
- Remove the dough from the refrigerator and roll them with a rolling pin on a floured surface to a thickness of half a centimeter, then cut with a cookie cutter to get small circles.
- Dip the cookie cutter in flour from time to time to get neat cookie shapes.
- Cut a hole in half of the circles—into stars or hearts—while leaving the other circles whole.
- Place the cookie circles on a nonstick baking sheet and bake them for 10 to 15 minutes in a 350°F oven until golden and cooked.
- Remove the tray from the oven and let cool, then spread apricot jam on the whole cookie circles, cover them with the circles that have openings in the center, and then dust with powdered sugar.
