Ghouzi with pumpkin, or ouzi with pumpkin, is one of those recipes that adds elegance to simple ingredients, but when they’re combined, cooked, and served this way, the result is wonderful.
Pumpkin Ouzi:
Ingredients
- Rice
- Meat suitable for ghouzi
- Peas
- Carrots
- Almonds and pine nuts
- One medium pumpkin
Method
- Boil the meat for the ghouzi well with all the aromatics, including bay leaves, cinnamon sticks, and cardamom pods...
- Cook the rice (the amount as needed, and minced meat can be added to the rice if desired, or you can simply use the larger ghouzi meat pieces)... Cook the rice until it is almost done, but we want it to remain firm so it can finish cooking later inside the pumpkin...
- Wash the pumpkin... Cut off the top and keep the top portion as a lid...
- Remove all the pumpkin flesh so you have a hollow pumpkin, empty inside..
- Brush the inside of the pumpkin with butter, then add the rice, followed by the meat, then the carrots and peas that have been lightly fried in advance...
- Sprinkle the fried almonds and pine nuts on top as the final layer over the rice and meat...
- Put the pumpkin lid back on, brush the outside of the pumpkin with butter, and place it in a baking tray in the oven for about an hour...
