Frozen Okra Stew

Okra is a very delicious and very nutritious vegetable. There are different ways to prepare okra, whether with oil or with meat. This recipe is for okra stew with pieces of meat, served alongside rice.

Ingredients

  • Frozen green okra
  • 1 head of garlic, about 6 to 7 cloves
  • 1 onion
  • 1 tomato
  • Small pieces of meat
  • 1 bunch fresh coriander
  • 1 teaspoon red pepper paste
  • 1 small can tomato paste
  • Lemon juice

Method

Follow the cooking sequence without leaving the page.

  1. Put boiling water in a pot on the stove. When the water is well boiling, add the frozen green okra and boil it for about a quarter of an hour, then remove it from the heat and place it in a colander
  2. You can fry the okra in vegetable oil instead of boiling it if you prefer
  3. Crush the garlic and put it in a wide pan over the heat with the pieces of meat, the chopped dried onion, the tomatoes and the chopped coriander. When the mixture is well fried, add about half a cup of water
  4. Let the mixture simmer over low heat for about 10 minutes until the meat is tender, then add the hot red pepper paste and also the sweet (mild) pepper paste (chili or hot sauce to taste); also add tomato paste and more water

  5. When the sauce thickens, add the boiled okra. At this stage be careful not to stir the mixture vigorously to preserve the okra's shape
  6. Leave the mixture for another 10 minutes, add lemon juice and turn off the heat

  7. Serve the okra stew alongside cooked rice with or without vermicelli according to preference
