Method
- Cut the zucchini into small cubes, then sauté them in a little oil until they soften.
- Add the finely chopped onion and sauté until the onion softens as well.
- Add the chopped tomatoes, increase the salt and hot pepper, stir, then cover and leave them on low heat until cooked.
- Finally, adjust the seasoning and cumin, and turn off the heat.
- Serve the zucchini maqlouba with tomato to be eaten cold or hot with Arabic bread.
