- 1 1/2 cups semolina
- 1 cup all-purpose flour
- 1/4 cup vegetable oil
- 1 teaspoon yeast
- 1 teaspoon ground anise
- 1/2 teaspoon baking powder
- 1/2 teaspoon mahlab
- 1/4 cup water
- Ingredients and method for preparing the syrup (attar):
- 2 cups sugar
- 1 cup water
- 1 tablespoon lemon juice
- 1 tablespoon orange blossom water
Method
- Mix all ingredients and knead well until you get a cohesive dough. Add water as needed for the dough.
- Shape the dough into small balls. Pass the balls through a plastic sieve and roll them into finger shapes.
- Let Zeinab fingers rest for about half an hour. Pour plenty of vegetable oil into a deep pot and fry the fingers until golden brown.
- Remove the fried Zeinab fingers from the hot oil and dip them immediately into syrup.
