Strawberry Jam (Fraise)

One of the tastiest and easiest jams to make. You can leave it chunky or mash it, according to taste. Delicious on toast with butter.

Ingredients

Start here, then move straight into the method.

  • 5 kg strawberries
  • 2.5 kg sugar
  • Juice of a lemon

Method

Follow the cooking sequence without leaving the page.

  1. Remove the green caps from the strawberries, wash them well, then drain them very thoroughly.
  2. Add the sugar to the strawberries and let them soak for two hours so the strawberries begin to absorb the sugar.
  3. After the time has passed, put the strawberries in a pot over medium heat.
  4. When white foam appears on the surface of the pot, skim it off.
  5. As soon as the jam boils, add lemon juice so the jam stays bright and light in color.
  6. Let the strawberry jam simmer for about two hours over low heat until it sets.
  7. Using a large spoon, mash the strawberry pieces; this step can be omitted if you prefer.
  8. Place the strawberry jam on a tray and cover it with cheesecloth or a clean white cotton cloth.
  9. Expose the jam to the sun for a few days to evaporate more moisture; place it in a completely dry spot and cover it at the end of each day, then return it to the sun the next day.
  10. After two or three days, put the jam into airtight glass jars and open them as needed.
