Stewed Rice Mujaddara (Mujaddara Rez Makhbousa)
Stewed rice mujaddara — a traditional, soft-textured mujaddara of lentils and rice. Many enjoy this dish; try it for the kids as it's healthy and nourishing.

Ingredients
Start here, then move straight into the method.
- 1 1/2 cups lentils
- 1/2 cup Egyptian rice
- 2 medium onions
- Oil
- Salt
Method
Follow the cooking sequence without leaving the page.
- Wash the lentils, then put them in a pot with 6 cups of water and simmer them until they are a quarter cooked.
- Add the washed rice on top, then leave them over medium heat until the rice begins to cook.
- In a skillet, place the chopped onion with the oil and fry until it softens and browns.
- Add the onions over the lentils and let the mujaddara cook until the ingredients are very well cooked, even to the point of thickening.
- If the mujaddara is too stiff, add a little water as needed, then let the mujaddara simmer briefly and spoon it into bowls.
- Serve the stewed rice mujaddara hot or cold alongside vegetables and salads, especially cabbage salad
