Oatmeal Banana Muffins
If you have ripe bananas, you can easily turn them into a delicious treat the kids can take to school. This recipe is even more appealing because it also contains oats!

Ingredients

- 1 1/2 cups flour
- 1 cup oats
- 1/2 cup brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 ripe bananas
- 1 egg
- 3/4 cup milk
- 1 teaspoon vanilla
- 1/3 cup vegetable oil
Method

- Start by mixing all the dry ingredients: combine the flour and sugar with the baking powder, oats, and salt.
- In another bowl whisk the egg with the vanilla and add the bananas mashed well with a fork.
- Add the milk and oil and whisk again. Add the dry mixture and continue mixing with a wooden spoon until you have a uniform batter.
- Divide the batter evenly among muffin or cupcake tins.
- Place the muffin tray in a preheated oven at 180°C until the muffins are cooked and have risen.
- This quantity makes 12 cupcakes or muffins
