Ingredients:

1 1/2 cups all-purpose flour

\r\n

1 cup rolled oats

\r\n

1/2 cup brown sugar

\r\n

2 teaspoons baking powder

\r\n

1/2 teaspoon salt

\r\n

2 ripe bananas

\r\n

1 egg

\r\n

3/4 cup milk

\r\n

1 teaspoon vanilla extract

\r\n

1/3 cup vegetable oil

\r\n

\r\n

\r\n

\r\n

Preparation:

\r\n

First, whisk all the dry ingredients together: flour, sugar, baking powder, oats, and salt.

\r\n

In another bowl, whisk the egg with the vanilla and mix in the mashed bananas well.

\r\n

Add the milk and oil and whisk again. Add the wet ingredients to the dry and stir with a wooden spoon until the batter is smooth.

\r\n

\r\n

Spoon the batter evenly into muffin cups.

\r\n

Place the muffin tin in a preheated oven at 180°C until the muffins are cooked through and puffed up.

\r\n

\r\n

This makes enough for 12 cupcakes or muffins
