Ingredients
- 3 cups flour
- 2 teaspoons yeast
- 2 tablespoons sugar
- 1 teaspoon salt
- 1/4 cup potato flour or finely mashed boiled potato
- 3 tablespoons soft butter
- 1/2 cup milk
- 1 egg
- za'atar
- oil

Method
- Mix the flour, butter, yeast, sugar, salt, and mashed potato together
- In a small bowl, mix the lukewarm milk with the egg and whisk until combined, then add them to the first mixture
- Knead the mixture well for about 10 minutes and let it rise for about an hour or more as neededTimers: 10 min
- In a bowl, combine the za'atar and oil and mix well, then on a clean work surface dust a little flour and divide the dough into two portions
- Roll out the first portion with a rolling pin, spread the za'atar and oil over it, then cut it lengthwise, roll it up, and place it on a baking tray lined with parchment paper
- Repeat the process until all the dough is used
- Let the za'atar rolls rise a second time for about half an hour
- After the required time, bake the za'atar rolls in a preheated oven at 200°C for about 15 minutes or until they change color, then brown the tops slightlyTimers: 15 min
