Ingredients

  • 1 kg finely minced beef
  • 2 heads of garlic, about 10 cloves
  • 2 eggs
  • 1/2 cup fine breadcrumbs
  • salt
  • black pepper
  • ground cinnamon
  • pistachios
  • 1 raw onion
  • 1 potato
  • 2 carrots
  • 2 tomatoes
  • 1 cup red wine or 1 cup vinegar for non-drinkers
  • 1 tablespoon sugar

Method

  1. Knead the finely minced meat with the crushed garlic, the two eggs, fine breadcrumbs, salt, spices, and cinnamon.
  2. Divide the meat mixture into 7 pieces (or to taste), then roll each piece out on a sheet of plastic wrap into a rectangle, place the pistachios on it, then roll it up using the plastic wrap, then place them in the fridge for two hours; after that, put a little vegetable oil in a pot, fry the onion, potatoes, carrots and tomatoes with a little garlic, then set them aside.
  3. In the same pot in which you fried the vegetables, fry the meat rolls on all sides.
  4. After that, add the onion, garlic, potatoes, carrots, and tomatoes; pour over wine or vinegar with 1 tablespoon of sugar, add water and let it simmer for 1 hour and 15 minutes.

  5. Remove the meat from the broth, set it aside and using a hand blender puree the vegetables to make the sauce; serve the roast beef with mashed potatoes made from boiled and mashed potatoes to which you add a piece of butter and 1 liter of milk, then salt, nutmeg, and white pepper.
