Ingredients
- Flesh from 1 kilo of hollowed zucchini
- 1 tablespoon olive oil
- Juice of 1 lemon
- A pinch of salt
- 1 tablespoon crushed garlic
- 1 tablespoon dried mint
Method
- After hollowing out the zucchini, place the flesh in a pan with the olive oil and stir over medium heat until softened.
- Add the salt and stir. When you notice the flesh starting to stick to the pan, add the lemon juice, crushed garlic, and dried mint, stir for a moment, then turn off the heat.
- Serve the zucchini flesh as an appetizer with saj bread or oven-baked bread.
