Ingredients

  • Flesh from 1 kilo of hollowed zucchini
  • 1 tablespoon olive oil
  • Juice of 1 lemon
  • A pinch of salt
  • 1 tablespoon crushed garlic
  • 1 tablespoon dried mint

Method

  1. After hollowing out the zucchini, place the flesh in a pan with the olive oil and stir over medium heat until softened.
  2. Add the salt and stir. When you notice the flesh starting to stick to the pan, add the lemon juice, crushed garlic, and dried mint, stir for a moment, then turn off the heat.
  3. Serve the zucchini flesh as an appetizer with saj bread or oven-baked bread.
