Ingredients

  • 1 large cup peeled almonds
  • 1/2 lemon
  • a pinch of salt
  • 2 tablespoons cornstarch
  • sesame seeds
  • black seed or nigella seeds
  • thyme
  • sumac, dried mint
  • olive oil

Method

  1. Place the peeled almonds in water and let them soak for at least 12 hours.
    Timers: 720 min
  2. After the required time has passed, place the almonds in an electric grinder and grind them well. Add the lemon juice and a pinch of salt... continue grinding, then add the cornstarch and grind well until you get a finely ground mixture.
  3. Transfer the mixture to a small pot and place it over low heat, stirring until you get a firm dough. You can add more salt and lemon juice to taste.
  4. Let the mixture cool completely, then shape it into balls and roll them in sesame seeds, or black seed, cumin, thyme, sumac, and dried mint, as desired...
  5. Place the labneh balls in a jar and pour olive oil over them until they are fully covered.
