Dairy-Free, Animal-Product-Free Labneh
Most of us eat traditional labneh and take it for granted, but some people have a milk allergy and still crave labneh. For them, we present this recipe free of any animal-derived ingredients!

- 1 large cup peeled almonds
- 1/2 lemon
- a pinch of salt
- 2 tablespoons cornstarch
- sesame seeds
- black seed or nigella seeds
- thyme
- sumac, dried mint
- olive oil
Method
- Place the peeled almonds in water and let them soak for at least 12 hours.Timers: 720 min
- After the required time has passed, place the almonds in an electric grinder and grind them well. Add the lemon juice and a pinch of salt... continue grinding, then add the cornstarch and grind well until you get a finely ground mixture.
- Transfer the mixture to a small pot and place it over low heat, stirring until you get a firm dough. You can add more salt and lemon juice to taste.
- Let the mixture cool completely, then shape it into balls and roll them in sesame seeds, or black seed, cumin, thyme, sumac, and dried mint, as desired...
- Place the labneh balls in a jar and pour olive oil over them until they are fully covered.
