Coconut Cake with Cream Cheese

A delicious, rich cake where cream cheese flavors blend beautifully with coconut. Try this easy and wonderfully tasty recipe.

Ingredients\r\n2 1/2 cups all-purpose flour\r\n5 blocks of cream cheese, at room temperature\r\n5 eggs, at room temperature\r\n3/4 cup coconut milk\r\n1 1/4 cups sugar\r\n1 teaspoon vanilla\r\n1 tablespoon baking powder

1 cup vegetable oil

To decorate: sweetened condensed milk and shredded coconut

Ingredients

  • 2½ cups flour
  • 5 blocks of cream cheese (any kind you have)
  • 5 room-temperature eggs
  • ¾ cup coconut milk
  • 1¼ cups sugar
  • 1 teaspoon vanilla
  • 1 tablespoon baking powder
  • 1 cup vegetable oil
  • For decoration: sweetened condensed milk and grated coconut

Method

Follow the cooking sequence without leaving the page.

  1. In the mixing bowl, beat the eggs slightly, then add the sugar and vanilla and continue beating for 2 minutes.

  2. Add the cream cheese pieces one by one, continuing to beat.
  3. Add the oil and beat, then add the coconut milk while continuing to beat.
  4. Sift the dry ingredients: the flour and baking powder.
  5. Add the dry ingredients to the mixture, beating gently so the batter doesn't lose air.
  6. Pour the batter into a cake pan greased with butter and dusted with flour.
  7. Place the pan in the preheated oven at 170°C for about 1 hour or until done...

  8. When the cake is baked, brown the top and leave it in the turned-off oven for 15 minutes. Remove it from the oven and set aside to cool before inverting and decorating with sweetened condensed milk and grated coconut, or as desired.
