Diet Nut Cake
Diet nut cake — light, easy and delicious. Using a small amount of brown sugar and whole wheat flour lowers the calories and makes the cake healthier.

Ingredients

- 2 eggs
- 1/2 cup brown sugar
- 1 tsp lemon zest
- 1/2 cup lemon or orange juice
- 1/3 cup oil
- 1 1/2 cups whole wheat flour
- 1 tbsp baking powder
- a pinch of vanilla
- Nuts: raisins, walnuts, almonds, cashews

Method
Follow the cooking sequence without leaving the page.
- Beat the eggs with the sugar, lemon zest and vanilla until the sugar dissolves completely and the mixture is thick and pale.
- Add the juice and oil and beat well.
- Sift the flour and baking powder, add gradually, and fold with a spoon from top to bottom until the batter is uniform.
- Toss the nuts in a little flour so they don’t sink to the bottom when added.
- Grease the cake pan with oil or butter and dust with flour. Pour the batter into the pan and spread the floured nuts on top.
- Bake in a preheated oven at 160°C (320°F) for about 30 minutes, or adjust according to your oven.Timers: 30 min
- Let the cake cool before removing it from the pan and serving.
