Ingredients

  • 1 cup (100 g) almond flour
  • 1 cup + 1 tablespoon (100 g) rice flour or almond flour
  • 10 dates, cut into small pieces
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup + 1 teaspoon (100 ml) coconut milk or skim milk
  • 1 tablespoon honey (optional)
  • Blueberries (fresh or frozen, whichever you have)
  • 1 teaspoon baking powder
  • A pinch of salt

Method

  1. In a bowl combine both types of flour with the salt and baking powder and stir well.
  2. In another bowl whisk the eggs with the vanilla and honey well using a whisk.
  3. Add the milk to the egg mixture and continue whisking the mixture.
  4. Add the dates to the eggs and then add the flour mixture and whisk again.
  5. Add the washed blueberries and gently fold them in with a wooden spoon.
  6. Pour the blueberry cake batter into a square pan lined with parchment paper.
  7. Place the light blueberry cake pan in the preheated oven at 180°C for about 15 to 20 minutes or until cooked, depending on oven strength.
