Easy Pineapple Cake .. one of the tastiest and lightest cakes for summer

Ingredients

  • Caramel:
  • 1/2 cup butter
  • 1 cup brown sugar
  • 1 tablespoon water
  • Cake:
  • 2 cups flour
  • 1 cup sugar
  • 3/4 cup butter
  • 3/4 cup pineapple juice
  • 3/4 tablespoon baking powder
  • 1/4 teaspoon baking soda
  • A pinch of salt
  • 3 eggs
  • 1/2 teaspoon vanilla (powder or extract)
  • Fresh or canned pineapple rings
  • Canned cherries

Method

  1. Begin by making the caramel: put 1/2 cup butter in a saucepan over heat, and when the butter melts add the brown sugar and a tablespoon of water; stir well for several minutes until the mixture comes to a boil and forms caramel
  2. Pour the caramel into the pan that was previously greased with butter and let it cool slightly, then arrange the pineapple rings and cherries
  3. Prepare the cake: beat the butter first, then add the sugar gradually and continue beating until you obtain a light, creamy mixture
  4. Separate the egg yolks from the whites. Add the yolks one at a time, add the vanilla and a pinch of salt, and beat
  5. Begin adding the flour and the juice in batches, alternating flour then juice until all are used, beating each time
  6. Add the baking powder and baking soda and beat
  7. Whip the egg whites separately until stiff; add them to the cake batter and fold with a spatula until the pineapple cake batter is uniform
  8. Pour the cake batter over the pineapple and cherries arranged in the pan
  9. Place the pan in the oven on the middle rack at 180°C for 45 minutes, or until cooked through

  10. Test it before removing it from the oven
  11. Let the cake cool at room temperature, then invert it onto a wide serving plate
