Ingredients
- 1 cup well-boiled sweet potato
- 1 and 1/4 cups shredded coconut
- 3/4 cup fine oats
- 1 tablespoon tahini
- 1 tablespoon date molasses
- 1 teaspoon baking powder
- 1 tablespoon coconut oil - optional
- 1 teaspoon chia seeds or flax seeds - optional
- 1/4 teaspoon ground fennel
- 1/4 teaspoon ground anise
- 1/4 teaspoon ground cinnamon
- A pinch of salt

Method
- Place the cooked potato, tahini, date molasses, cinnamon, anise, and chia seeds in a bowl and blend them well.
- Add the oats, grated coconut, baking powder, and oil to the mixture and mix by hand (mix, do not knead).
- Let the mixture rest for 15 minutes.Timers: 15 min
- After the required time, take a piece and, in a cookie mold or by hand, place a date inside and press it into the center to form a nice shape.
- Repeat until the mixture is finished.
- Put the oat date-molasses cookies into a preheated oven at 180°C for about 15 minutes.Timers: 15 min
- After the cookies are baked — do not leave them in the oven for too long so they don't become hard — place them on a wire rack to cool.
- Store the oat date-molasses cookies in an airtight container in the refrigerator.
