Thursday's Murkad Cookies
A fragrant, spiced cookie recipe traditionally baked for Thursday gatherings. Includes anise, sesame, caraway, and a warming dough.

Ingredients
Start here, then move straight into the method.
- 3 cups flour
- 1 cup granulated sugar
- 2 tablespoons raw sesame seeds
- 1 tablespoon nigella seeds (black seed)
- 1 tablespoon ka'ak spice mix
- or
- 1 teaspoon 'aqdat safra' (or turmeric)
- 1 teaspoon yeast
- 1 teaspoon baking powder
- 1 tablespoon anise seeds
- 1 teaspoon mahleb
- 4 tablespoons vegetable oil or 60 ml
- 1/2 cup or 100 ml vegetable ghee
- 3/4 cup or 1 cup liquid milk, as needed
Method
Follow the cooking sequence without leaving the page.
- 1 tablespoon dried anise, 1 tablespoon cinnamon, 1 tablespoon grated nutmeg, 1 tablespoon zedoary (or 1 tablespoon each of ground clove, coriander, and cardamom) .. use about 1 tablespoon in total
- 1 teaspoon turmeric or turmeric powder
- 1 teaspoon yeast
- 1 teaspoon baking powder
- 1 tablespoon anise seeds
- 1 teaspoon mahleb
- 4 tablespoons vegetable oil or 60 ml
- 1/2 cup or 100 ml vegetable shortening
- 3/4 cup or 1 cup warm milk as needed
- Combine all dry ingredients and mix well
- Add the fats and mix until well combined
- Begin adding warm milk and knead until smooth
- Let the dough rest for about three hours
- Line a baking sheet with parchment
- Shape the dough into discs or rounds and place into the designated cookie molds, pressing until they take their final shape
- Place the discs on parchment and bake in a preheated oven at 180°C until the cookies brown on the bottom
- Brown the tops of the cookies
- Let Thursday's cookies cool before serving
