Chicken Kabsa

A tested, easy chicken kabsa recipe you should try. You can grill or fry the chicken to suit your preference.

Ingredients

Start here, then move straight into the method.

  • Bone-in chicken breasts
  • Aromatics/spices for boiling the chicken
  • 1 teaspoon chicken spice
  • 1 teaspoon curry powder
  • 4 cloves garlic
  • Fresh grated ginger
  • 1 onion
  • 1 tomato
  • 1 tablespoon hot pepper - as desired
  • 3 cups rice - or as desired
  • Kabsa special spice blend
  • 1 tablespoon tomato paste

Method

Follow the cooking sequence without leaving the page.

  1. Wash the chicken well and rub it with salt, vinegar, and lemon
  2. Then wash the chicken again and place it in the colander
  3. Put the chicken in a deep pot and cook for about 15 minutes over the heat with a spoon of oil and various aromatics such as bay leaves, cinnamon sticks, nutmeg, and cardamom pods

  4. Add water over the chicken and aromatics to cover the pieces and simmer them for about an hour and a half
  5. Now to prepare the kabsa
  6. Fry the mashed garlic, chopped onion, and grated ginger in a tablespoon of vegetable oil. When the onion and garlic soften, add the chopped tomato and hot pepper...
  7. Stir them then add 4 colored sweet peppers and 6 large grated carrots on top...
  8. Stir the mixture again with a little salt and the special kabsa spice, add the washed and drained rice and toss it with the vegetables
  9. Add the chicken cooking broth and two tablespoons kabsa spice, one tablespoon turmeric, one small tablespoon fennel, and one tablespoon tomato paste...
  10. When the rice boils, reduce the heat and leave the rice on low heat until cooked
  11. Meanwhile, we have fried or grilled the chicken as desired. Pour the rice into a wide serving dish and garnish with the chicken and nuts as desired
