Baked Potato Kibbeh with Ground Meat
A tray-baked potato kibbeh that resembles meat kibbeh, with the same filling and the same kibbeh dough ingredients, except that the meat in the dough is replaced with potatoes. This recipe is especially flavorful with kibbeh spice mix, of course, and it's delicious served with yogurt and salad. Try it!

Ingredients
- 3 boiled potatoes
- 3 cups fine bulgur
- 1 onion
- kibbeh spice mix

- 2 tablespoons starch
- Filling:
- 1 large onion
- 1/2 kilo ground meat
- a pinch of black pepper
- a pinch of cinnamon
- 1 tablespoon sumac
- salt
- nuts - optional
- oil

Method
- Mash the boiled potatoes while they are still hot.
- Previously moisten the bulgur with just enough water so that each grain is dampened without adding too much water.
- After half an hour, rub the soaked bulgur with your hands until it softens and the grains break.
- Add the mashed potatoes, the very finely chopped onion, the kibbeh seasoning, the starch, and salt, and knead well to obtain a cohesive dough.
- Prepare the filling beforehand: sauté the chopped onion in a little oil until soft, then add the meat and cook until done.
- Add more salt, spices and sumac, and optionally nuts according to taste, stir and remove the filling from the heat.
- Divide the potato kibbeh dough into two portions.
- Brush the baking dish with a little oil and spread the first portion of the potato dough evenly.
- Spread the filling, then roll out the second layer of kibbeh between sheets of plastic wrap or parchment paper so the second layer matches the size and shape of the baking dish.
- Place the second portion of potato dough over the filling in the dish and smooth the surface with a hand moistened with water.
- Cut the tray into portions as desired using the tip of a knife moistened with water, then drizzle some oil over the surface.
- Bake the potato kibbeh with ground meat in the oven until it is cooked through at the bottom, then brown the top.
