Easy Potato Kibbeh
A very easy vegetarian kibbeh made from mashed potatoes mixed with a spiced bulgur and herb paste — aromatic and delicious.
Easy potato kibbeh — a Lebanese classic. Very tasty — once you try it it will become a top vegetarian dish in your kitchen
Ingredients
Start here, then move straight into the method.
- 1 dry onion
- 1 cup bulgur wheat
- 2 tbsp whole cumin seeds
- 1 tbsp chopped fresh mint
- 3 large potatoes, boiled
- 3 tbsp water
- Salt, to taste
- Fresh hot chili pepper
- Sweet red bell pepper
- Olive oil as needed

Method
Follow the cooking sequence without leaving the page.
- In a blender, place the onion, bulgur, cumin, mint, sweet red pepper and hot chili.
- Blend for about 30 seconds until the onion is fully chopped.
- In a bowl, mash the boiled potatoes with a fork.
- Knead the potatoes well by hand after adding the ground onion-and-bulgur mixture.
- Add salt, the water and a little olive oil as needed and knead until you get the desired kibbeh texture — firm but slightly soft.
- Shape the potato kibbeh on a serving plate and drizzle olive oil on top.
- Serve with fresh vegetables and eat with bread.
