  • 150 g chicken fillet
  • 1 tsp ground red pepper or paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • a pinch of salt
  • 3 tbsp vegetable oil
  • 2 onions
  • 1 green pepper
  • 1 red pepper
  • 2 garlic cloves
  • 2 medium tomatoes
  • 1 small cup mushrooms (canned or fresh)
  • 1 small cup black and green olives
  • 1 tbsp finely chopped green onion
  • markook (saj) bread or tortillas
  • mozzarella cheese
  • cheddar cheese

Method

Follow the cooking sequence without leaving the page.

  1. Cut the chicken into small cubes and season with salt, oil, paprika, garlic powder and onion powder...
  2. Fry the seasoned chicken in a pan over the heat... then add the chopped onion, chopped colored peppers and sliced mushrooms...
  3. Stir for a few minutes then add the crushed garlic, chopped tomato and a pinch of salt...
  4. Stir the mixture then after a few minutes add the black and green olives...
  5. Leave to simmer over low heat for 5 minutes then turn off the heat and add finely chopped green onion...

  6. Place a portion of the quesadilla chicken filling in the center of two saj (markook) flatbreads and add a little grated mozzarella and cheddar cheese...
  7. Fold the flatbread into a square and brush both sides lightly with vegetable oil...
  8. Brown the flatbread in a pan on both sides...
  9. Cut the quesadilla into triangles and serve alongside fries and avocado sauce, guacamole or cocktail sauce
  10. Fried eggplant with za'atar sauce
