Oil-Free Strawberry Cake

Oil-free strawberry (fraise) cake — very tasty

Ingredients

Start here, then move straight into the method.

  • 1 1/4 cups cake flour (or regular flour + 2 tsp baking powder)
  • 1 1/4 cups powdered sugar
  • 5 egg yolks
  • 5 egg whites
  • A pinch of salt
  • 2 teaspoons lemon juice
  • 1 teaspoon orange blossom water
  • Filling
  • 1/2 cup orange juice
  • Fresh strawberries (1 box)
  • 2 cartons of whipped Dream Whip (prepared as directed on the packages)
  • 5 tablespoons powdered sugar to mix with the strawberries before decorating
  • Almonds for decoration

Method

Follow the cooking sequence without leaving the page.

  1. Whisk the egg yolks with three tablespoons of powdered sugar (from the 1 1/4 cup) until the mixture turns white.
  2. In a second bowl, whisk the egg whites with a pinch of salt until stiff and white, then add the remaining confectioners' sugar to the egg whites and whisk again.
  3. Turn off the mixer and add the lemon juice to the egg whites, fold with a spatula or spoon and set aside.
  4. Return to the first mixture and begin adding the flour to the egg yolk mixture in batches until finished, stirring a little each time.
  5. Then gradually fold in the egg white mixture little by little until finished, and finally add the orange blossom water and stir.
  6. Grease a small pan with a little butter and line it with parchment paper, then pour the strawberry cake batter into the pan.
  7. Bake it at 180°C for 40 minutes.

  8. Let it cool completely at room temperature, then slice it horizontally into three equal layers.
  9. Slice the strawberries and macerate them with powdered sugar before filling the cake.
  10. Brush it with lemon juice, then spread cream on the bottom and middle layers and place the strawberries on top of the cream between the layers.
  11. Also frost the outside with cream and decorate with fruit, especially strawberries and blanched almonds.
  12. Chill the strawberry cake in the refrigerator long enough to cool and set before serving.
