Cold Semolina Dessert Loaf
A wonderful homemade cold semolina dessert! The result is like ice cream. We freeze this loaf until it is well set... super easy, practical, and inexpensive. Try it!
Cold semolina dessert loaf... easy and quick, with inexpensive and available ingredients
Ingredients
Start here, then move straight into the method.
- 1 cup fine semolina
- 1 cup sugar
- 1 liter or 4 cups milk
- 1 cup coconut
- A pinch of ground mastic mixed with the sugar
- Biscuits, any type available
- Decoration as desired - optional
- Liquid chocolate
- Chocolate truffles
- Seasonal fruit such as cherries
- Mint leaves
Method
Follow the cooking sequence without leaving the page.
- Combine the milk, semolina, sugar, and desiccated coconut while cold, then place the mixture over heat, stirring until it thickens.
- Turn off the heat and add a pinch of mastic; you can substitute it with a pinch of vanilla.
- Pour the mixture into an English loaf pan or a rectangular ovenproof loaf pan lined with parchment paper.
- Place whole cookies crosswise on top, leaving a small space between each one along the length of the pan (see photo gallery).
- Cover the pan and place it in the freezer for three hours or for a full day.
- Turn it out onto a serving plate and decorate as desired.
