Ingredients

- Dough
- 1 kilo flour
- 2 tablespoons sugar
- 2 tablespoons yeast
- 2 tablespoons vinegar
- A pinch of salt
- 1/2 cup oil
- 3 tablespoons powdered milk
- 2 tablespoons yogurt
- 2 cups lukewarm water, or as needed for the flour
- Filling
- 2 kilos spinach
- 3 large onions
- 1 tablespoon sweet pepper paste
- 2 tablespoons sumac
- 1/2 teaspoon mixed spice
- 1/2 teaspoon ground cumin
- Salt
- Vegetable oil
- Olive oil
- Filling
- Clean the spinach, wash it well, and drain it. Then chop it and place it in a pot on its own, stirring to get rid of any excess water and letting it wilt.
- Drain and squeeze it, then set it aside briefly.
- Finely chop the onions and sauté them in a little vegetable oil over the heat until softened. Then add the spinach to the pan along with the pepper paste, spices, and salt, mix well, and turn off the heat.
Method

- Mix all the dry ingredients, then add the vinegar and oil and rub together. Start adding the water and knead until you get a soft dough. Then wrap it with food-grade plastic wrap and cover it with a cloth.
- Let the dough rest for at least 1 hour, or according to the temperature.Timers: 60 min
- When the dough has rested and puffed up, start working with it.
- Roll it out to the desired thickness; it is best to keep it thin, then cut it, fill it, and seal it as desired.
- Bake the pies in a hot oven until they take on color and brown on top.
- Remove them from the oven and brush them with a little olive oil.
- When the filling has cooled, add the sumac and mix. The filling is now ready for stuffing.
